Method:
Make the Apple Filling
- Peel, core, and dice the Pink Lady® apples.
- Combine apples, brown sugar, cinnamon, vanilla, apple juice, and cornstarch in a saucepan.
- Cook over medium heat for about 6 minutes until the mixture thickens and juices form.
- Remove from heat and set aside to cool.
Prepare the Pie Dough
- Sift flour into a mixing bowl.
- Work in the butter until the texture becomes crumbly with small lumps.
- In a separate bowl, whisk egg yolks and salt (if used).
- Heat milk until steaming, then gradually stir it into the egg mixture.
- Pour the wet mixture into the flour and stir until dough forms.
- Knead lightly on a floured surface for 1 minute until smooth.
Shape the Pies
- Divide dough into 6 equal pieces and roll each into a ball.
- Roll out each ball into a circle.
- Spoon about 2 tablespoons of apple filling into the center.
- Fold in half, seal edges with your fingers, and trim any excess dough if needed.
- Press edges with a fork to secure the filling.
Fry the Pies
- Heat oil in a deep fryer or pan to 350°F (175°C).
- Fry pies one at a time for about 2 minutes per side, or until golden brown.
- Remove and drain on paper towels.
Make the Glaze
- Whisk powdered sugar, vanilla, and milk until smooth.
- Brush or drizzle over the warm pies right after frying.
- Allow glaze to set for a few minutes before serving.
