Method:
- Preheat the oven to 180°C (350°F) and line a muffin tray with paper liners.
- Chop the Pink Lady® apples into small cubes and set aside.
- In a large bowl, whisk together eggs, milk, oil, yogurt, vanilla, and cinnamon until well combined.
- In a separate bowl, combine flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring until you have a smooth, lump-free batter.
- Fold in the chopped Pink Lady® apples.
- Scoop the batter into the prepared muffin liners using an ice cream scoop or spoon, filling each about ¾ full.
- Bake for 25–30 minutes or until golden brown and a toothpick inserted in the center comes out clean.
- Cool on a wire rack before serving.
